Instead of trying to copy popular protein bars from the grocery store, we put the ingredients into a delightful cookie!
Both of my kids are student athletes and the oldest is always game to experiment with healthy snacks. It’s been over two years since she’s had fried food! Now if she could apply the same discipline to keeping her room clean LOL. This kid can eat and tends to favor expensive “health” foods that do not contain high fructose corn syrup and other problematic ingredients – can’t blame her.
These protein bars work well any time of day and especially after workouts. We could have cut the dough into bar shapes but why not just make a cookie!
They taste wholesome and satisfying. We want these to travel well and require zero refrigeration so they will be firm cookies.
Protein Cookie Recipe (Makes 24 cookies)
1/2 cup coconut oil
1/2 cup honey
1 egg (or replace with 1 tablespoon flax seed and 2 tablespoons water premixed)
2 tablespoons chia seed
2 tablespoons water
2 tablespoons molasses (optional or add less)
1/2 cup vegetable protein powder
1/2 cup cacao powder (optional if you would like less chocolate flavor)
1 cup whole wheat flour
1/2 cup coconut flour
3/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup dark chocolate chips (we like dairy and soy free if possible)
1/2 cup pecans chopped. (Optional. Or another nut of choice)You can mix everything with a spoon in one bowl! Preheat oven to 370 F (187 C)
EASY BAKING STEPS
1. Cream together coconut oil and honey.
2. Add egg, chia seed, water and molasses. Stir well.
3. Stir in protein powder, whole wheat flour, cacao powder, coconut flour, baking soda, salt, chocolate chips and pecans. Do not over mix.
4. Make 1 inch balls and place on parchment. Flatten some before cooking. Bake 9 minutes. They will burn quickly so monitor closely.
